Spice up the simple carrot and make it delicious, sweet and juicy – a versatile addition to many a dish.
- 6 large carrots
- 1-2 cups chicken stock
- 1 tbsp butter
- 1 tbsp brown sugar
- 1 tbsp orange juice (optional)
- Cut carrots trying to keep them a similar size so that they can cook evenly.
- Cover the carrots with the stock and cook over medium heat until the carrots are tender.
- Strain the carrots, put them back into the pot and add a tablespoon of butter to the pot. Sprinkle light brown sugar over the carrots (you can also add a tablespoon of orange juice at this stage). Once the butter and sugar have melted mix the carrots gently to coat.
